Brooklyn Rooted
I’ve worked at a lot of great restaurants. But even the best restaurants in the world have a major drawback: distance between the chef and the diners. I want to put the personal connection back in the gourmet dining experience. I want to share my passion for food, ingredients and cooking with you. I want to show you what your food is all about.
To me, a great meal involves more than just delicious food. It needs inspired food. AtRooted, my dining experience, I’ll cook you an amazing three-course meal inspired by something unique – either an interesting method of cooking, form of agriculture or a local seasonal ingredient. We’ll discuss this inspiration and experience how it plays through the meal. I can promise slightly unexpected flavor combinations, beautifully balanced and composed dishes and interesting conversation.
For this dinner series, Brooklyn Rooted II, we’ll enjoy a menu inspired by one of my favorite places – the Brooklyn Botanic Gardens. Each course is based on a individual garden.

Starter: Homemade Peasant Bread, Brown Butter, Marinated Olives, Pickled Vegetables
First Course: Inspired by the first garden you see when you enter, the Japanese Garden.
Smoked Mussel and Golden Beet Salad - Sweet Pea Shoots, Pickled Pearl Onion, Red Chile

Second Course: Inspired by the Herb Garden (my personal favorite).
Housemade Pappardelle – Winter Truffle, Heirloom Egg Yolk, Kale and Radish Top Pesto,Pecorino Cheese
Third Course: Inspired by Patrick Dougherty’s Stick Art Garden.
"Caramel Apple" – Juniper Roasted Apple, Hard Caramel Tuile, Rosemary Butter Cookie
The meal will be served in three courses paired with wine, and will conclude with take-home recipes of that evening’s menu (slightly tailored for a home cook, of course).
Come dine with me and I’ll not only serve you an awesome meal but also leave you with some food for thought.
